Savor summer with zucchini feta bread, a must-have for any kitchen!
Ingredients:
  • 3 cups Gold Medal™ self-rising flour
  • 1/2 teaspoon baking soda
  • 1 1/2 cups coarsely shredded zucchini, squeezed to drain (1 medium zucchini)
  • 1 cup crumbled feta cheese (4 oz)
  • 2 tablespoons chopped green onions (2 medium)
  • 1 teaspoon chopped fresh dill weed
  • 2/3 cup buttermilk
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 2 eggs
Instructions:
  • Preheat oven to 350°F and generously coat a 9x5-inch loaf pan with cooking spray.
  • Combine flour and baking soda in a large bowl. Add zucchini, cheese, onions, and dill, and toss to coat evenly.
  • Combine buttermilk, sour cream, oil, and eggs in a medium bowl, whisk until well combined. Pour the mixture into the flour mixture and stir until just moistened. Spread the batter evenly in the pan.
  • Bake for 1 hour 5 minutes to 1 hour 10 minutes until a toothpick inserted in the center comes out clean. Let it cool for 15 minutes, then remove from the pan onto a cooling rack. Allow it to cool completely for about 1 hour.
