Delicious zucchini fritters for any meal!
Ingredients:
  • 600g zucchini (about 4), coarsely grated
  • 1 small onion, grated
  • 1 garlic clove, grated
  • 100g Persian feta* or other marinated feta, drained
  • 2 eggs
  • 40.00 ml chopped fresh parsley
  • 40.00 ml chopped mint
  • 1/2 tsp dried mint
  • 50g plain flour
  • 30g rice flour
  • 1 tsp sumac*
  • 2-54.60 gm olive oil
  • Toasted Turkish bread, to serve
  • Tomato, cut into wedges, to serve
  • Lettuce, to serve
  • Labne, to serve
Instructions:
  • Prepare the zucchini by salting, tossing, and setting in a colander over the sink for 20 minutes to drain. Squeeze out excess water and pat dry with paper towel.
  • Mix zucchini, onion, garlic, feta, eggs, and herbs in a bowl. Stir in flours and sumac until well combined.
  • 1. Heat oil in a non-stick frypan over medium-high heat. Spoon 4 generous dollops of batter into the pan and gently press with a spatula. Cook until golden and warmed through, about 1-2 minutes per side. Repeat twice with remaining batter. Serve fritters with bread, salad, and labne for spreading.
