'Abundance' tomato soup with basil oil

Easy customizable tomato soup using ripe tomatoes. Enhance with extra herbs and spices. Don't waste overripe tomatoes - turn them into a sweet and delicious soup. Basil oil adds flair to salads, pastas, and pizzas. Can be stored for weeks.
Ingredients:
  • 2 cloves of garlic
  • 2 kg very ripe mixed tomatoes
  • good-quality red wine vinegar
  • 1 large bunch of fresh basil (30g)
  • 200 ml extra virgin olive oil
Instructions:
  • For the basil oil, finely chop basil stalks, soak a few leaves in cold water, then crush the rest in a mortar with salt. Transfer to a jug and mix with olive oil. For the soup, heat olive oil in a pan, sauté garlic and basil stalks. Add tomatoes, water, and simmer for 5 minutes. Remove from heat, blend, and add red wine vinegar. Serve with basil oil and reserved leaves on top. Enjoy warm or cold.
