Mexican zucchini rounds cooked in savory stewed tomatoes, onions, and garlic, topped with melted mild cheddar cheese - a comforting and flavorful dish.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 small white onion, sliced thinly
  • 4 zucchini, sliced 1/4-inch thick
  • 1 (14 ounce) can stewed tomatoes
  • 1 cup shredded mild Cheddar cheese
Instructions:
  • In a saucepan, heat vegetable oil over medium heat. Sauté onion and garlic until soft, around 5 minutes. Add zucchini and stewed tomatoes, stir gently, cover, and cook until zucchini is tender, for 8 to 10 minutes. Remove from heat, season with salt, stir in Cheddar cheese, and let it melt.
