'Full of veg' tomato sauce

Kid-friendly tomato pasta sauce - a delicious way to sneak in those veggies!
Ingredients:
  • 2 small onions peeled and chopped
  • 1 small leek chopped and washed
  • 2 sticks celery trimmed and chopped
  • 2 red peppers chopped
  • 2 courgettes grated
  • 2 carrots grated
  • 1 large pinch dried oregano
  • 2 bay leaves
  • 4 x 400 g tinned plum tomatoes
  • 1 small butternut squash peeled and seeds removed, grated
  • sea salt
  • freshly ground black pepper
Instructions:
  • 1. Heat a large saucepan over medium heat and add a generous drizzle of oil. Add onions, leek, celery, peppers, courgettes, carrots, and herbs. Cook covered for 20 minutes until vegetables are soft but not colored. 2. Stir in tomatoes, squash, 500ml water, salt, and pepper. Bring to a boil, then simmer for 30 minutes until squash is tender. 3. Remove bay leaves, let sauce cool slightly, then blend until smooth. Season to taste with salt and pepper.
