Chewy craisin cookies full of cranberries, oatmeal, and raisins - a perfect snack for lunch boxes or afternoon cravings.
Ingredients:
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 cups quick cooking oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 1 cup sweetened dried cranberries (such as Craisins®)
Instructions:
  • Preheat the oven to 350°F (175°C) and grease cookie sheets.
  • In a large bowl, use an electric mixer to beat together butter, sugars, eggs, and vanilla until light and fluffy, about 5 minutes. In a separate bowl, combine oats, flour, baking soda, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, beating briefly after each addition. Mix in raisins and cranberries, then drop spoonfuls onto cookie sheets.
  • Bake until edges turn golden brown, for about 12-14 minutes in the preheated oven.
