Elevate classic oatmeal cookies with carrots, dried cranberries, and maple syrup for a unique twist.
Ingredients:
  • cooking spray
  • 1 cup oats
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 3 cups grated carrots
  • 1 cup sweetened dried cranberries (such as Craisins®)
  • 1 cup dark brown sugar
  • 1 cup light brown sugar
  • 0.5 cup butter, softened
  • 0.5 cup corn oil
  • 1 tablespoon maple syrup
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then give your baking sheet a quick spray with cooking spray.
  • In a bowl, combine flour, oats, baking powder, baking soda, and ground cinnamon. Mix in carrots and dried cranberries. Add dark brown sugar, light brown sugar, eggs, butter, oil, maple syrup, vanilla extract, and salt to the mixture. Stir until well combined to form the dough.
  • Place dollops of dough, spaced 2 inches apart, on the baking sheet.
  • Bake until the edges turn golden brown, for about 12 to 15 minutes in a preheated oven.
