Delicious and hearty oatmeal cookies with carrots, raisins, and peanut butter - perfect for snacking or packed lunches.
Ingredients:
  • 0.5 cup chunky peanut butter
  • 0.5 cup coconut oil
  • 0.5 cup agave nectar
  • 0.5 cup brown sugar
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon ground cloves
  • 2 cups old-fashioned oats
  • 1.75 cups grated carrots
  • 0.5 cup raisins
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a bowl, combine peanut butter, coconut oil, agave nectar, brown sugar, eggs, and vanilla. In a separate bowl, mix flour, baking powder, cinnamon, salt, baking soda, and cloves; add to the peanut butter mixture until dough forms. Gently mix in oats, carrots, and raisins. Drop 1 to 2 tablespoons of dough per cookie onto a baking sheet.
  • Bake until edges are gently golden, for approximately 15 minutes in the preheated oven.
