Delicious oatmeal carrot cookies packed with sweet raisins and crunchy nuts - perfect for a quick, energizing breakfast or snack.
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup packed brown sugar
  • 1 egg
  • 0.75 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon ground cloves
  • 2 cups rolled oats
  • 1 cup shredded carrots
  • 0.5 cup raisins
  • 0.25 cup chopped walnuts
  • 1 tablespoon coarse sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and neatly line a baking sheet with parchment paper.
  • In a bowl, use an electric mixer to whip together butter and brown sugar until smooth and creamy. Then, mix in the egg and vanilla extract until well combined.
  • In a bowl, combine all-purpose flour, whole wheat flour, baking powder, cinnamon, baking soda, and cloves, whisk until blended. Add to the butter mixture and stir until just mixed. Fold in oats, carrots, raisins, and walnuts. Scoop large portions of dough onto the baking sheet and sprinkle with coarse sugar before baking.
  • Bake in the oven until edges are lightly browned, for about 10 to 12 minutes.
