Decadent oatmeal raisin cookies with dark chocolate, orange zest, pecans, and rich browned butter.
Ingredients:
  • 1 egg yolk
  • 1 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 16 Tbsp butter (2 sticks)
  • Grated zest of one orange
  • 1/2 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 1 tsp salt
  • 2 tsp vanilla
  • 1 large egg
  • 2 1/2 cups oatmeal rolled oats (Quaker Quick or Old Fashioned, do not use instant)
  • 2/3 cup chocolate chips
  • 1/2 cup chopped pecans (can sub walnuts)
  • 1/2 cup raisins
Instructions:
  • Preheat your oven to 375°F on the center rack. Line two large cookie sheets with parchment paper or silicone baking pads. Combine flour, baking soda, and cinnamon, and whisk together.
  • Mix fragrant orange zest with sweet granulated sugar, setting it aside for later use.
  • Brown ten tablespoons of butter in a small saucepan until golden and fragrant. Pour over the remaining six tablespoons of butter in a large mixing bowl, stirring until fully melted and combined.
  • Combine granulated sugar, orange zest, brown sugar, vanilla, and salt with the butter. Whisk until smooth. Add the egg and egg yolk, whisk for 30 seconds, then let rest for 3 minutes. Repeat twice more until the mixture is thick and glossy to elevate the flavor and texture of the cookies.
  • Using the stand mixer, blend the wet and dry ingredients until fully combined. Mix in the oatmeal, chocolate chips, raisins, and nuts thoroughly.
  • Shape dough into evenly sized balls and place them on a baking sheet, with 2 inches of space between each one.
  • Bake for 10-11 minutes until edges are golden brown. Allow cookies to cool for 5 minutes before transferring to a rack to cool completely.
