Delicious twist on classic oatmeal raisin cookies with white chocolate chips and refreshing orange zest.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup plus 2 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon orange extract
  • 1 cup old-fashioned oats
  • 8 oz white chocolate baking squares, chopped (about 1 1/2 cups)
  • 1/2 cup raisins or golden raisins
Instructions:
  • Preheat oven to 350°F and line cookie sheets with parchment paper.
  • Combine flour, baking soda, cinnamon, and salt in a medium bowl. In a separate large bowl, cream together butter and both sugars using an electric mixer until light and fluffy. Mix in egg and orange extract until just combined. Gradually add the flour mixture and oats on low speed until fully blended. Fold in white chocolate and raisins.
  • Scoop cookie dough onto baking sheets in heaping tablespoonfuls, spaced 3 inches apart. Bake for 13 to 15 minutes until lightly browned. Let cool for 5 minutes, then transfer to cooling racks.
