White Christmas mini rum and raisin puddings recipe

Impress your family with snowy white Christmas puddings that are perfect for gifting. Make extra and freeze for easy holiday presents.
Ingredients:
  • 50g (1/4 cup) golden raisins, finely chopped
  • 20.00 ml dark rum
  • 65g (1/2 cup) slivered almonds, toasted, finely chopped
  • 40g (1 cup) rice bubbles
  • 200g white chocolate, melted
  • 25g mini white marshmallows, cut into thirds
  • 80g dark chocolate, melted
  • 32 gold icing stars, to decorate
Instructions:
  • Prepare a large baking tray with non-stick baking paper. In a small bowl, mix together the raisins and rum, then cover and let sit for 1 hour until the rum is absorbed.
  • In a large bowl, mix almonds and rice bubbles. Pour in the white chocolate and mix thoroughly. Gently stir in the soaked raisins and marshmallows. Use a small ice-cream scoop or a level tablespoon to form rough balls with the mixture. Press firmly and place on a tray. Let it sit until it starts to firm up.
  • As the balls firm up, reshape each one to create a smooth finish. Allow to set for 2 hours or until firm.
  • Pour the dark chocolate into a sealable plastic bag, snip the corner, and drizzle over the puddings. Garnish each one with a gold star and let them sit until the chocolate hardens.
