Simple and irresistible cookies.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 1 cup packed brown sugar
  • 1 cup shortening
  • 2 cups quick cooking oats
  • 1 cup dates, pitted and chopped
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease your cookie sheets.
  • Combine flour, baking powder, baking soda, and salt in a separate bowl. Keep aside.
  • In a large bowl, beat shortening and both sugars together until light and fluffy, using an electric mixer on medium speed.
  • Incorporate eggs one by one, ensuring thorough mixing after each addition. Then, stir in the vanilla extract.
  • Mix the dry ingredients into the creamed mixture, ensuring they are fully incorporated.
  • Incorporate oats, dates, and walnuts.
  • Place small spoonfuls of dough onto a baking sheet, ensuring they are 2 inches apart.
  • Bake until lightly browned, about 8 minutes. Transfer to racks to cool.
