Date-filled oatmeal crumble bars.
Ingredients:
  • 1.5 cups chopped pitted dates
  • 0.25 cup packed light brown sugar
  • 1 teaspoon orange zest
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
  • 1.5 tablespoons lemon juice
  • 0.875 cup water
  • 2 cups quick-cooking oats
  • 0.5 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup butter
  • 2 tablespoons water
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x9 inch square pan. In a small saucepan over medium-high heat, combine dates, 1/4 cup brown sugar, orange zest, cloves, 1/2 teaspoon cinnamon, allspice, lemon juice, and water. Stir constantly until the dates are soft and the mixture thickens into a paste, about 10 minutes. Remove from heat and let it cool.
  • Combine oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon, and salt in a medium bowl to create the crust and topping mixture. Add butter and mix until coarse and crumbly. Stir in 2 tablespoons water evenly. Press 2/3 of the mixture into the pan as the crust. Spread the date mixture evenly on top. Sprinkle the remaining crust mixture over the dates, then lightly press down.
  • Bake in the preheated oven for 20 to 25 minutes until the top is lightly toasted. Allow to cool completely before slicing into bars.
