Indulge in these easy date bars with a rich, sweet filling and oat crumble topping. Made with only 3 ingredients and a hint of sugar, they're perfect for satisfying your sweet tooth. Pair with coffee for a relaxing afternoon treat, or top with ice cream for a decadent dessert.
Ingredients:
  • 3 cups chopped pitted dates (1 lb)
  • 1 1/2 cups water
  • 1/4 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup butter or margarine, softened
  • 1 3/4 cups all-purpose or whole wheat flour
  • 1 1/2 cups quick-cooking oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Instructions:
  • In a 2-quart saucepan, simmer the Filling ingredients over low heat for 10 minutes, stirring constantly until it thickens. Let it cool for 5 minutes before using.
  • Preheat your oven to 400°F and generously grease a 13x9-inch pan with shortening.
  • Combine brown sugar and butter in a large bowl until thoroughly mixed. Add flour, oats, baking soda, and salt, stirring until mixture is crumbly. Press half of the crumb mixture evenly onto the bottom of the pan. Spread filling over the crust, then sprinkle with the remaining crumb mixture and press lightly.
  • Bake for 25 to 30 minutes, or until golden brown. Let cool for 5 minutes in the pan on a cooling rack. Slice into 36 pieces while still warm.
