Nutty coconut date bars: a protein-packed snack perfect for hiking or busy days.
Ingredients:
  • 0.33333334326744 cup slivered almonds
  • 0.5 cup flaked coconut
  • 10 pitted dates, or to taste
  • 0.25 cup cashews, or to taste
  • 1 teaspoon coconut oil
Instructions:
  • Combine almonds and coconut in a food processor until finely blended, then add dates and pulse until mixed. Add cashews and coconut oil; pulse until mixture is thick and sticky. Shape into a square on waxed paper, fold the sides over the top. Chill until firm for at least 30 minutes.
