Delicious no-bake cookie balls with crispy rice cereal, sweet dates, and shredded coconut.
Ingredients:
  • 2 eggs, beaten
  • 1 cup white sugar
  • 1 cup chopped dates
  • 1 tablespoon butter
  • 3 cups crispy rice cereal
  • 1 cup flaked coconut
Instructions:
  • Combine eggs, sugar, and dates in a saucepan over medium heat. Bring to a gentle boil, stirring occasionally, and cook for 5 minutes. Remove from heat and stir in butter and vanilla. Add crispy rice cereal. Butter your hands and shape the mixture into walnut-sized balls. Roll the balls in coconut before serving.
