Quick and easy German Christmas oatmeal cookies with chopped dates, butter, and eggs.
Ingredients:
  • 10 tablespoons unsalted butter, divided
  • 3 cups rolled oats
  • 2 eggs
  • 0.5 cup white sugar
  • 1 teaspoon vanilla sugar
  • 1.5 cups finely chopped, pitted dates
Instructions:
  • In a small saucepan over low heat, melt 9 tablespoons of butter until smooth. Stir in oats until well coated. Remove from heat and allow to cool for about 20 minutes.
  • Combine eggs, sugar, vanilla sugar, and baking powder in a large bowl, then fold in the dates-oat mixture.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then spread a touch of the reserved 1 tablespoon of butter on a baking sheet for a perfect sear.
  • Using a 2-teaspoon measure, place small mounds of the oat-date mixture on the baking sheets, ensuring they are 2 inches apart.
  • Bake in the oven until golden brown on top and bottom, approximately 20 minutes.
