Delight in the familiar biscuit flavors transformed into exquisite Iced VoVo lamingtons.
Ingredients:
  • 450g pkt unfilled rectangular sponge cake slabs
  • 230g (2/3 cup) strawberry jam, plus extra, to decorate
  • 300ml ctn thickened cream, whipped, plus extra, to decorate
  • 450g (3 cups) icing sugar
  • 80ml (1/3 cup) boiling water
  • Red food colouring, to tint
  • 130g (1 1/2 cups) desiccated coconut
Instructions:
  • Trim the brown crust from the sponge slabs using a serrated knife, then cut each slab in half horizontally to make 4 sponge pieces.
  • Spread jam on 2 sponge pieces and whipped cream on the other 2. Sandwich them together. Cut each sandwich into 8 rectangles to create 16 pieces.
  • Sift the icing sugar into a large bowl, then add the water and mix well. Stir in enough color to turn the icing pink.
  • Lay out the coconut on a plate. Dip a sponge piece in icing using 2 forks. Let the excess icing drip off. Roll the sponge in coconut, patting gently. Place on a wire rack. Repeat with remaining sponge, icing, and coconut. Let sit for 30 minutes to firm up.
  • Cut a 1cm-wide strip lengthwise out of the center of each lamington top. Using separate piping bags, fill one with cream and the other with jam. Fill the gap in each lamington with cream first, then top with jam.
