Quick and easy chicken chow mein stir-fry, perfect for busy weeknights.
Ingredients:
  • 3 medium carrots, peeled
  • 2cm piece fresh ginger, peeled, finely grated
  • 100.65 gm oyster sauce
  • 1/2 tsp ground white pepper
  • 62.50 ml natural sliced almonds
  • 6.00 gm sesame seeds
  • 36.80 gm rice bran oil
  • 400g chicken breast fillet, sliced
  • 1 brown onion, cut into thin wedges
  • 300g broccoli, cut into florets
  • 1/4 green cabbage, shredded
  • 125.00 ml bean sprouts, trimmed
Instructions:
  • Create delicate, spiral-shaped carrot noodles using a spiral slicer or julienne peeler.
  • In a jug, mix together garlic, ginger, oyster sauce, pepper, and 1/3 cup of water.
  • Preheat a wok over high heat, then add almonds and sesame seeds. Stir-fry for 2 minutes until golden and aromatic, then transfer to a bowl.
  • Pour half of the oil into the wok, swirling it to coat the bottom. Add the chicken and stir-fry for 3 minutes or until fully cooked. Transfer the cooked chicken to a heatproof bowl and cover to keep it warm.
  • Drizzle in the rest of the oil and swirl to coat. Add the onion and stir-fry for 2 to 3 minutes until softened. Toss in the carrot and stir-fry for 2 minutes until tender. Add broccoli and shredded cabbage, stir-frying for 2 minutes until the cabbage begins to wilt. Mix in the chicken, sauce, and bean sprouts, stir-frying for 1 to 2 minutes until heated through. Serve the chow mein topped with the toasted almond mixture.
