Peanut Butter Haystacks

Irresistible no-bake haystacks: chewy chow mein noodles coated in butterscotch and peanut butter.
Ingredients:
  • waxed paper
  • 1 cup butterscotch chips
  • 0.5 cup peanut butter
  • 2 cups chow mein noodles
  • 0.5 cup salted peanuts
Instructions:
  • Prepare a baking tray by lining it with waxed paper.
  • In a double boiler over simmering water, combine butterscotch chips and peanut butter. Stir often and use a rubber spatula to scrape down the sides to prevent burning. Heat until melted, about 5 minutes.
  • Combine the noodles and peanuts with the creamy melted peanut butter mixture.
  • Using a fork, place dollops of dough on the lined tray. Let them cool at room temperature until firm.
