10-minute green tea soup with dumplings

Quick and comforting soup ready in no time.
Ingredients:
  • 1L (4 cups) Vegetable Liquid Stock
  • 12.00 gm sesame seeds
  • 2 green shallots
  • 100g fresh shiitake mushrooms
  • 1 bunch broccolini
  • 4 green tea teabags, tags removed
  • 240g packet frozen Mr Chen’s Prawn & Chive Wontons
  • 80g (1/2 cup) podded frozen edamame
  • 10.60 gm soy sauce
Instructions:
  • In a large deep frying pan, heat the stock over high heat until it comes to a boil.
  • Toast sesame seeds in a small frying pan over medium-low heat for 2 minutes until golden. Thinly slice shallots, thickly slice large mushrooms, and cut broccolini in half lengthways while the stock heats up.
  • Combine teabags, wontons, edamame, broccolini, 2 soup sachets from the wonton packet, and 500ml (2 cups) of water in the stock. Let simmer for 6 minutes or until wontons are cooked through.
  • Discard the teabags, then stir in the soy sauce. Serve the soup in bowls and garnish with sesame seeds and shallot before serving.
