Indulge in a quick and easy mini cheesecake in just 10 minutes.
Ingredients:
  • 2 butternut snap biscuits
  • 250g block cream cheese, softened
  • 89.38 gm honey
  • 12 shortcrust pastry tartlets (see note)
  • 300ml tub thickened cream, whipped
Instructions:
  • Add the biscuits to a small food processor and pulse until they turn into fine crumbs.
  • Incorporate cream cheese and honey with an electric mixer until velvety.
  • Fill pastry cases with cheese mixture. Pipe cream on top using a 1cm fluted nozzle. Sprinkle with biscuit crumbs and serve right away.
