Whip up a tasty Thai beef noodle salad in just 10 minutes!
Ingredients:
  • 2 tsp sesame oil
  • 10.60 gm soy sauce
  • 500g piece grass-fed beef rump steak
  • 125g Thai-style rice noodles
  • 250g cherry tomatoes
  • 150g mixed salad leaves
  • 5 baby cucumbers, thinly sliced lengthways
  • 82.50 ml lime and chilli vinaigrette
  • Fresh mint sprigs, to serve
  • Crushed peanuts, to serve
  • Sliced red chilli, to serve
Instructions:
  • In a bowl, mix oil and soy sauce. Massage the mixture onto the beef. Heat a chargrill pan over medium-high heat. Place the beef on the pan. Sear for 2 minutes on each side or until desired doneness. Move the beef to a plate and let it rest for 2 minutes before thinly slicing.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 3 minutes until tender. Drain the noodles and then rinse them under cold water to refresh. Make sure to drain the noodles well before using.
  • Create a mouthwatering platter by mixing together beef, noodles, tomato, salad leaves, cucumber, and vinaigrette. Top it off with a generous sprinkle of fresh mint, peanuts, and a kick of chili. Present and enjoy!
