Ready in under 30 minutes, these mini peach pies require just four ingredients.
Ingredients:
  • 1 recipe pastry for a single 9-inch pie crust
  • 1 large fresh peach, sliced into 8 pieces
  • 1 teaspoon white sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Roll out pie pastry on a cutting board. Cut into eight 4-inch circles using a cookie cutter. Put 1 peach slice at the center of each circle and fold in half to enclose the peach slice, sealing the edges together. Arrange mini pies on a baking sheet.
  • Combine cinnamon and sugar in a small bowl, then generously sprinkle the mixture over the mini pies.
  • Bake in the oven until the crust is lightly browned, about 10-13 minutes.
