Italian-inspired chicken and rice dish with flavorful basil, garlic, and Parmesan.
Ingredients:
  • 1 pound chicken tenders, cut into strips
  • 1 cup chopped onions
  • 1 cup sliced red pepper (1/4-inch x 1 1/2 inch)
  • 1 teaspoon minced fresh garlic
  • 2 cups water
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup UNCLE BEN'S® Flavor Infusions Chicken & Herb Rice
  • 0.5 cup chiffonade fresh basil leaves
  • 0.25 cup shredded Parmesan cheese
Instructions:
  • In a large skillet, warm the olive oil over medium-high heat.
  • Cook the chicken strips until perfectly cooked through, about 4 to 6 minutes.
  • Combine the onions, red pepper slices, and fresh garlic.
  • Cook the vegetables until they are just barely tender, stirring occasionally, for 4 to 5 minutes.
  • Combine the refreshing water, ripe tomatoes, and fluffy rice.
  • Cover the pan and simmer until the mixture starts to boil.
  • Simmer on medium low heat until rice is tender and liquid is absorbed, approximately 10 minutes.
  • Uncover the dish, gently fold in fragrant basil leaves and savory Parmesan cheese. Store any remaining portions in the refrigerator for later enjoyment.
