Succulent chicken with tomato, broccoli, onion, garlic, and oregano sauce, mixed with penne pasta and fresh basil for a burst of flavor.
Ingredients:
  • 3 tablespoons olive oil
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1 tablespoon chopped onion
  • 2 (14.5 ounce) cans diced tomatoes
  • 2 cups fresh broccoli florets
  • 1 pinch dried oregano
  • 18 ounces dry penne pasta
  • 0.25 cup fresh basil leaves, cut into thin strips
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Heat oil in a large skillet over medium heat. Cook chicken until slightly browned. Add onion and garlic; cook for about 5 minutes until garlic is golden and onions are translucent.
  • Combine the tomatoes, broccoli, salt, pepper, and oregano in the pot. Stir to combine, then bring the mixture to a boil. Once boiling, cover and reduce heat to simmer for approximately 10 minutes.
  • While waiting, bring a big pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes until tender; drain and return to pot. Stir in chicken sauce until well combined.
  • Toss in fresh basil and mix thoroughly. Sprinkle with Parmesan cheese before serving.
