Cheesy chicken and broccoli pasta bake - a comforting family favorite with creamy sauce.
Ingredients:
  • 1 (16 ounce) package rotini pasta, uncooked
  • 2 tablespoons butter
  • 3 tablespoons extra-virgin olive oil
  • 2 cups broccoli florets, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • salt and pepper to taste
  • 0.125 teaspoon chipotle chile powder
  • 2 cups Cheddar cheese, shredded
  • 0.25 cup onion, finely diced
  • 1 pound ground chicken
Instructions:
  • Bring a pot of salted water to a gentle boil. Add rotini pasta and cook until tender but slightly firm, for 7 to 10 minutes. Drain, cover, and keep warm for later use.
  • In a saucepan over medium-high heat, melt butter and stir in olive oil. Add broccoli and cook until tender, about 5 minutes. Sprinkle with flour and cook for 1 minute. Pour in chicken broth and bring to a boil. Stir in milk and season with salt, pepper, and chipotle pepper powder if desired. Simmer until sauce thickens, about 8-10 minutes. Add Cheddar cheese and stir until melted. Remove from heat.
  • In a separate large skillet over medium-high heat, heat the 2 tablespoons of olive oil. Add the onion, ground chicken, and 1 cup of broccoli. Cook and stir until the chicken is browned and cooked through, about 10 minutes. Season with salt and pepper to taste. Simmer until the liquid is reduced, about 5 minutes.
  • Preheat the oven broiler to High, then lightly grease a 9x13 inch baking dish.
  • Mix the pasta with the broccoli sauce until well combined. Add sour cream, if desired. Combine the broccoli sauce mixture with the chicken mixture. Transfer to the baking dish and sprinkle with the remaining cup of Cheddar cheese.
  • Broil until the cheese is gooey and golden, about 3 to 5 minutes.
