2-ingredient five-spice pulled pork with noodle slaw

"Simple and delicious pulled pork served with vibrant Asian slaw filled with noodles, chili, and coriander."
Ingredients:
  • 1.8kg boneless pork shoulder
  • 20.00 ml five-spice powder
  • 220g shelf-fresh hokkien noodles
  • 100g Beetroot slaw
  • 250.00 ml fresh coriander sprigs
  • 1 long green chilli, sliced
  • 1 long red chilli, sliced
  • 87.45 gm South East Asian dressing (see notes)
Instructions:
  • First, remove and discard the netting from the pork, then gently pat it dry with a paper towel. Next, generously rub the pork with five-spice powder, followed by seasoning it well with salt and pepper. Place 1/2 cup of water in a 5.5-litre slow cooker and add the seasoned pork. Cover and cook on LOW for 8 hours or on HIGH for 4 hours until the pork is very tender.
  • Create Noodle Slaw: Place noodles in a heatproof bowl and cover with boiling water. Let them stand for 2 minutes, then separate them with a fork. Drain and rinse under cold water. Combine with slaw, coriander, chillies, and dressing in a large bowl.
  • Remove the pork rind and fat. Shred the pork using 2 forks and serve with noodle slaw.
