Whip up easy paleo pancakes with just 2 ingredients - a hit for kids!
Ingredients:
  • 1 teaspoon butter
  • 1 large banana, broken into chunks
  • 1 large egg
Instructions:
  • In a large skillet over medium heat, melt some butter.
  • Smash banana chunks in a bowl until creamy. Mix in egg and whisk until batter is smooth.
  • Spoon batter into sizzling butter to create 2 pancakes. Cook until bubbles appear and edges look dry, approximately 3 minutes. Flip and cook until golden brown on the other side, around 2 minutes.
