Indulgent vanilla tres leches cake with creamy cream cheese frosting in a Mexican twist.
Ingredients:
  • 6 eggs, separated
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 6 tablespoons milk
  • 0.25 cup butter, melted
  • 4 teaspoons vanilla extract
  • 4 teaspoons baking powder
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1 cup half-and-half
  • 1 (4 ounce) package cream cheese, softened
  • 2 cups heavy whipping cream
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Prepare a 9x13-inch baking pan by greasing and flouring it.
  • Using an electric mixer, whip 6 egg whites until fluffy. Slowly add and beat sugar until soft peaks form. Gradually mix in flour, followed by milk, reserved yolks, melted butter, 4 teaspoons of vanilla extract, and baking powder, ensuring each ingredient is fully incorporated before adding the next. Transfer batter to a prepared baking pan.
  • Bake in a preheated oven for up to 30 minutes until the cake has a beautifully browned and crusty top. Allow the cake to cool in the pan for approximately 10 minutes before carefully transferring it to finish cooling.
  • Combine sweetened condensed milk, evaporated milk, and half-and-half in a bowl. Pour half of the milk mixture into a deep pan, ensuring it's longer than the cake. Place the cake in the milk mixture. Score deep lines into the cake using a fork, then pour the remaining milk mixture over the cake, letting it soak in.
  • Blend cream cheese and 1 teaspoon of vanilla extract in a bowl with an electric mixer until light and fluffy. Slowly incorporate cream until the frosting reaches a thick, spreadable consistency. Spread evenly over the cake.
