"Quick and easy mini meatloaf for busy weeknights!"
Ingredients:
  • 1/2 cup ketchup
  • 2 tablespoons packed brown sugar
  • 1 lb lean (at least 80%) ground beef
  • 1/2 lb ground pork
  • 1/2 cup Original Bisquick™ mix
  • 1/4 teaspoon pepper
  • 1 small onion, finely chopped (1/4 cup)
  • 1 egg
Instructions:
  • Preheat the oven to 450°F. Combine ketchup and brown sugar in a small bowl, reserving 1/4 cup for topping. In a large bowl, mix the remaining ingredients with the rest of the ketchup mixture until well combined.
  • Prepare your 13x9-inch pan by spraying it with cooking spray. Transfer the meat mixture into the pan and shape it into a 12x4-inch rectangle. Slice it lengthwise down the center and then crosswise into sixths to create 12 individual loaves. Using a spatula, separate the loaves slightly to ensure they are not touching at the edges. Lastly, brush the tops of the loaves with the reserved 1/4 cup ketchup mixture for a delicious finish.
  • Bake for 18 to 20 minutes, or until loaves are no longer pink in the center and a meat thermometer reads 160°F when inserted.
