30-minute gluten-free mini cheese bread bites made with tapioca flour and parmesan cheese - a delicious snack option!
Ingredients:
  • 3 cups tapioca flour
  • 1 1/2 teaspoons salt
  • 1 cup whole milk
  • 3/4 cup canola oil
  • 3 eggs
  • 1 cup gluten-free shredded or grated Parmesan cheese
Instructions:
  • Preheat oven to 375°F and generously grease 12 mini muffin cups with butter or cooking spray (without flour).
  • Place all ingredients in a blender and blend using short pulses until mixture is well combined. Fill muffin cups three-fourths full with batter.
  • Bake until golden and puffed, usually 15 to 20 minutes. Remove from pan and transfer immediately to a platter. Serve hot.
  • Continue making mini breads with the rest of the batter to yield around 24 more pieces, or you can refrigerate the batter for up to 5 days before baking.
