Impossibly Easy Mini Meatloaves

Make mini meatloaves for quick weeknight dinners.
Ingredients:
- 1/2 cup ketchup
- 1 lb lean (at least 80%) ground beef
- 1/2 cup Original Bisquick™ mix
- 1/4 teaspoon pepper
- 1 small onion, finely chopped (1/4 cup)
Instructions:
- Preheat oven to 450°F. Mix 1/4 cup of ketchup with the rest of the ingredients in a large bowl until fully combined.
- Prepare the pan with cooking spray and shape the meat mixture into a 10x4-inch rectangle inside it. Cut into 8 equal loaves, then space them out in the pan using a spatula. Finally, brush the tops of the loaves with the remaining ketchup.
- Bake for 18 to 20 minutes until loaves are no longer pink in the center and a meat thermometer reads 160°F when inserted.
