Ingredients:
  • 4.5kg Beechwood Smoked Half Leg Ham
  • 500ml (2 cups) Coca Cola
  • 200g (1 cup, firmly packed) brown sugar
  • Whole cloves, to decorate
Instructions:
  • Preheat the oven to 170C/150C fan forced. Heat cola and brown sugar in a saucepan over medium heat until the sugar dissolves. Let it come to a boil and simmer for 10-15 minutes until slightly thickened. Allow the glaze to cool completely for it to thicken further.
  • Take a small sharp knife and make a zigzag cut around the shank about 10cm from the end. Carefully separate the rind from the fat by gently lifting it with your fingers. Score the fat in a diamond pattern about 5mm deep, and insert 1 clove into the center of each diamond.
  • Glaze the ham generously with one-third of the glaze before baking. Bake the ham for 1 hour, basting it with the remaining glaze every 20 minutes, until it is heated through and the surface is golden and sticky. Let the ham rest for 15 minutes before slicing.
