Whip up paleo-friendly banana pancakes with just eggs and bananas - no flour needed!
Ingredients:
  • 1 large ripe banana
  • 2 eggs
  • 0.125 teaspoon baking powder
  • 1 pinch ground cinnamon
  • 2 teaspoons butter, or as needed
Instructions:
  • In a bowl, gently mash the banana with a fork, then mix in the eggs, baking powder, and cinnamon until well combined.
  • In a skillet over medium heat, melt butter until sizzling. Pour batter into the skillet and cook until bubbles appear and the edges set, around 2 to 3 minutes. Flip and continue cooking until golden brown, an additional 2 to 3 minutes. Repeat with the rest of the batter.
