Quick and easy banana pancake recipe using only 3 ingredients - ripe bananas, flour, and eggs. Healthier and quicker than traditional pancakes. Perfect for busy mornings! Adapted from a recipe by Alison Adams.
Ingredients:
  • 1 small ripe banana
  • 1 medium egg
  • 20.00 gm wholemeal self-raising flour
  • oil spray
Instructions:
  • In a medium bowl, smoothly mash the banana. Next, whisk in the egg and flour until smooth. Allow the mixture to sit for 5 minutes before proceeding.
  • Prepare a non-stick frying pan with a light coating of oil over medium heat. Pour 2 tablespoons of batter into the pan and spread it out using the back of a spoon until it's 1cm thick. Continue this process with the rest of the batter to create a total of 3 pancakes.
  • Cook the pancakes for 1–2 minutes until they are beautifully golden on one side. Flip them over and cook for another 1–2 minutes until they are golden and fully cooked. Finally, serve and enjoy!
