"Easy 3-ingredient strawberry ice cream muffins - perfect for the school holidays!"
Ingredients:
  • 750ml (3 cups) strawberries and cream ice-cream, softened, plus 12 small scoops, extra, to serve
  • 225g (1 1/2 cups) self-raising flour
  • Chopped strawberries, to serve
  • Chocolate sprinkles, to serve (optional)
Instructions:
  • Preheat your oven to 180C (160C fan forced) and line twelve 80ml (1/3 cup) muffin pans with paper cases.
  • In a bowl, combine the softened ice-cream and flour until well mixed. Distribute the mixture evenly among the pans. Bake for 12-15 minutes or until a skewer inserted in the middle comes out clean. Cool on a wire rack.
  • Present each muffin like a work of art by placing a generous scoop of creamy ice cream and a sprinkle of fresh strawberries on top. For the finishing touch, add a sprinkle of irresistible chocolate if desired.
