Quick and simple macaroons with just 4 ingredients, ideal for entertaining or a sweet post-dinner snack.
Ingredients:
  • 100g dried apricots, finely chopped
  • 260.00 gm shredded coconut
  • 395g can sweetened condensed milk
  • 100g dark chocolate, melted
Instructions:
  • Preheat your oven to 180C/160C fan-forced, and prepare 2 large baking trays by lining them with baking paper.
  • In a large bowl, mix apricot and coconut together. Pour in the sweetened condensed milk and stir until well combined. With damp hands, roll 2 level tablespoons of the mixture into balls. Space the balls 5cm apart on prepared trays.
  • Bake the macaroons for 15 to 18 minutes until they are lightly browned, then allow them to cool completely on the trays.
  • Place your luscious melted chocolate in a small bowl. Dip 1 macaroon base into the melted chocolate, letting any extra chocolate drip off. Place back on the tray. Let it stand for 30 minutes until it's perfectly set. Serve and enjoy.
