Quick and elegant 3-ingredient peach tartlets with apricot glaze - a speedy and impressive dessert.
Ingredients:
  • 1 (17.3 ounce) package frozen puff pastry, thawed
  • 0.75 cup apricot preserves, divided
  • 2 peaches - peeled, pitted, and thinly sliced, or more as needed
  • 2 teaspoons hot water, or as needed
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare 2 baking sheets by lining them with parchment paper.
  • Cut each puff pastry sheet into nine 3-inch squares. Add a touch of apricot preserves in the middle of each square. Arrange 3 peach slices in a fan shape over the preserves, keeping some pastry visible. Drizzle a bit more apricot preserves over the peaches.
  • Place one baking sheet in the preheated oven and bake until the puff pastry turns golden, approximately 10 minutes.
  • Mix 2 teaspoons of hot water with the apricot preserves in a small bowl to create a shiny glaze.
  • Drizzle the glaze over each warm tartlet and bake for an additional 2 minutes until golden brown. Repeat with the second baking sheet. Allow the tartlets to cool on a wire rack for about 10 minutes before serving.
