Try this simple frozen fruit cooler - no ice-cream maker required!
Ingredients:
  • 10 passionfruit, plus extra pulp, to serve
  • 150g (1 cup) icing sugar mixture
  • 300ml thickened cream
  • 260g (1 cup) Greek-style yoghurt
  • Waffle cones, to serve
  • Crushed meringues, to serve
Instructions:
  • Cut open and scoop out the pulp of 6 passionfruit into a strainer over a bowl. Use a spoon to press out all the juice from the seeds. Remove seeds. Add the remaining passionfruit pulp to the bowl. Mix in the icing sugar until dissolved.
  • Whip the cream with electric beaters until stiff peaks form. Gently fold in the mixture of yogurt and passionfruit. Place in an airtight container and freeze overnight.
  • Allow the mixture to thaw for a few minutes until slightly soft, then scoop it into waffle cones. Garnish with meringue and additional passionfruit pulp.
