50-Minute Corned Beef Brisket

Overnight sugar soak tenderizes brisket for speedy 50-minute Instant Pot® cook time.
Ingredients:
  • 1 (3 pound) corned beef brisket with spice packet
  • 1 tablespoon brown sugar
  • water
  • 2 teaspoons pickling spice
  • 2 teaspoons garlic powder
Instructions:
  • In a covered container, pour enough water to fully submerge the corned beef. Mix in brown sugar until dissolved. Unpack the corned beef, rinse thoroughly to remove curing residue, and place it in the container with water. If necessary, add more water to cover the meat completely. Refrigerate the container for 8 hours to overnight to soak. Remember to keep the spice packet for later use.
  • In a multi-functional pressure cooker (such as Instant Pot®), add 1 1/2 cups of water, the spice packet, and pickling spice. Insert a rack into the pot.
  • Season both sides of the beef with garlic powder after removing it from the soaking liquid. Place the beef on the rack, fat-side up, and cut in half if needed to fit. Lock the pressure cooker lid, select high pressure for 50 minutes following the manufacturer's instructions, and wait for the pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural-release method for about 10 minutes. Place corned beef on a cutting board, cover with aluminum foil, and allow to rest briefly before slicing.
