Savory corned beef hash with crispy potatoes and onions, a tasty twist on St. Paddy's leftovers.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, chopped
  • 5 large Yukon Gold potatoes, peeled and cut into 1/4-inch cubes
  • 1 large carrot, coarsely shredded
  • 2 pounds cooked corned beef, cubed
  • 2 tablespoons chopped fresh parsley
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.25 teaspoon dried thyme leaves
  • 1 pinch salt to taste
Instructions:
  • In a large skillet over medium heat, combine butter and olive oil until melted. Sauté onion until lightly browned for about 8 minutes. Add potatoes and carrot, and cook until tender while stirring occasionally, about 15 minutes.
  • Combine the corned beef, parsley, pepper, thyme, and salt into the mixture. Cook while stirring occasionally until the hash becomes crispy and golden brown, for an additional 10 to 15 minutes.
