Cheesy bars - ideal for dipping in soups and stews or as a tasty snack for kids on-the-go.
Ingredients:
  • 240g (1 1/2 cups) wholemeal self-raising flour
  • 75g (1/2 cup) self-raising flour
  • 100g cold butter, cut into 1cm pieces
  • 160g (2 cups) coarsely grated tasty cheese
  • 185ml (3/4 cup) milk, plus extra to brush
Instructions:
  • Preheat your oven to 200C/180C fan forced and prepare a large baking tray by lining it with baking paper.
  • In a large bowl, mix the flour. Use your fingertips to work the butter into the flour, leaving about 1/3 of the butter in small gravelly pieces throughout.
  • Add 120g (1 1/2 cups) of cheese into the mixture. Create a well in the center, pour in the milk, and use a flat-bladed knife to stir until just combined. Transfer the sticky dough onto a lightly floured surface. With floured hands, gently press the dough into a small rectangle. Fold one-third of the dough into the center, followed by the other third. Press out and fold again, being delicate to avoid overworking the dough.
  • Roll the dough until it's 1.5cm thick, then cut it into bars that are 4cm wide and 7cm long. Place them on the tray about 2cm apart. Brush the tops with extra milk and sprinkle with the remaining cheese. Bake for 20 minutes until golden. Enjoy warm or at room temperature.
