Try this easy and delicious side dish: Tahini yogurt with roasted cauliflower, currants, and mint.
Ingredients:
  • 1 large cauliflower, cut into florets
  • 40.00 ml currants
  • 280g yoghurt
  • 24.00 gm tahini
  • 1 bunch mint, leaves picked
Instructions:
  • Preheat the oven to 200C. Line a baking tray with parchment paper. Place the cauliflower on the tray, spray with olive oil, season, and roast for 25 minutes until golden and tender. Then, add the currants and roast for another 5 minutes until plump. Allow it to cool for 5 minutes before serving.
  • In a small bowl, mix together the yogurt and tahini. Season to taste.
  • Evenly spread the creamy yogurt mixture on a serving platter. Garnish with the flavorful cauliflower mixture and fresh mint for a delightful presentation.
