Canadian-inspired Dijon mustard and salsa meatloaf, a favorite among firefighters. Pair with baked beans and greens. Leftovers make delicious next-day sandwiches.
Ingredients:
  • 2 slices whole wheat bread
  • 2 pounds ground beef
  • 1 cup medium salsa
  • 1 green onion, chopped
  • 2 tablespoons chopped onion
  • 2 tablespoons whole grain Dijon mustard
  • 2 tablespoons minced garlic
  • 1 teaspoon Worcestershire sauce
  • salt and pepper to taste
  • 1 tablespoon barbeque sauce
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x5-inch loaf pan.
  • Place bread in a small bowl and cover with warm water; let it soak.
  • In a large bowl, combine beef, salsa, green onion, onion, Dijon mustard, garlic, Worcestershire sauce, salt, and pepper. Squeeze excess liquid from bread and incorporate into the mixture. Thoroughly mix by hand until fully combined. Shape the mixture into a loaf and transfer to the loaf pan.
  • After baking in the preheated oven for 1 hour, remove and drain excess fat, then generously top with barbeque sauce. Place it back in the oven and bake for an additional 15 minutes until beautifully glazed.
