ABC bliss balls

Delicious and shareable healthy bliss balls.
Ingredients:
  • 60g dried cranberries
  • 45g (1/4 cup) dried blueberries
  • 80g (1/2 cup) roasted cashews
  • 85g (1/2 cup) roasted almonds
  • 55g (1/3 cup) sunflower seeds
  • 90g (1/3 cup) almond, brazil and cashew spread
  • 35g (1/3 cup) desiccated coconut, plus extra, to coat
  • 50g chopped dried apricots
Instructions:
  • In a heatproof bowl, combine cranberries and blueberries. Pour boiling water over the berries and let them sit for 10 minutes to soften. Drain thoroughly.
  • In a food processor, finely chop cashews, almonds, and sunflower seeds. Add nut butter, soaked fruit, and coconut, then process until well combined. Pour in 1 tablespoon of water and process until mixture forms a dough-like consistency. Finally, add apricot and process until incorporated.
  • Sprinkle additional coconut onto a baking paper-lined tray. Shape tablespoon-sized portions of the mixture into balls. Roll the balls in more coconut to cover them completely. Keep stored in a sealed container, separated by layers of baking paper.
