Sweet soy sauce pork belly recipe

Air-fried pork belly marinated in sweet soy, topped with crispy crackling and served with ABC Sweet Soy Sauce.
Ingredients:
  • 80ml (1/3 cup) Sweet Soy Sauce, plus extra to serve
  • 24.40 gm fish sauce
  • Juice of 1 lime, plus wedges to serve
  • 2 tsp finely grated ginger
  • 2 garlic cloves, crushed
  • 1kg piece pork belly, rind scored Sea salt Sliced green spring onion, to serve
Instructions:
  • In a glass or ceramic dish, mix sweet soy sauce, fish sauce, lime juice, ginger, and garlic. Add pork with the rind-side up. Refrigerate uncovered overnight.
  • - Take the pork out of the marinade and arrange it in the air fryer basket with the rind facing up. Season the top with salt (no need for oil). Air fry at 200C for 20 minutes until the rind is golden and crispy. Lower the temperature to 160C and continue cooking for 30-35 minutes until the pork is perfectly cooked. Let it rest for 10 minutes before serving.
  • Slice the pork into thick pieces. Drizzle generously with sweet soy sauce, sprinkle with onion, and serve with lime wedges.
