Chilli pork and basil stir-fry

Quick and delicious pork mince stir-fry with mushrooms, tomatoes, and sweet soy sauce.
Ingredients:
  • olive oil cooking spray
  • 1 small red chilli, deseeded, finely chopped
  • 2cm piece ginger, peeled, grated
  • 300g lean pork mince
  • 1 bunch broccolini, trimmed, cut into thirds
  • 150g green beans, cut into thirds
  • 2 tomatoes, cut into wedges
  • 100g enoki mushrooms, trimmed
  • 30.00 ml kecap manis
  • 125.00 ml basil leaves
  • 400.00 gm steamed white rice, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat a wok over high heat until smoking. Coat with oil spray. Toss in chili and ginger, stir-fry for 30 seconds. Add the mince, use a wooden spoon to break it up, stir-fry for 2 minutes until browned. Transfer to a plate.
  • Lightly coat wok with oil spray. Add broccolini and beans, stir-fry for 2 minutes. Incorporate tomatoes, stir-frying for an additional 2 minutes. Lastly, mix in mushrooms.
  • Mix the kecap manis and 1 tablespoon of hot water together. Pour the mixture into the wok with the mince. Stir-fry for 1 minute until heated through. Take the wok off the heat and gently mix in the basil.
  • Fill bowls with fluffy rice. Add a generous portion of flavorful stir-fry on top and garnish with fresh lemon wedges before serving.
