Healthy chilli pork and basil stir fry recipe

Healthy Thai basil stir-fry - flavorful, low-calorie midweek dinner.
Ingredients:
  • 1 long fresh red chilli, deseeded, thinly sliced, plus extra sliced chilli, to serve (optional)
  • 82.50 ml stir-fry sauce (see Notes)
  • 3 tsp sesame oil
  • 500g pork fillet, trimmed, thinly sliced
  • 1 large red onion, cut into thin wedges
  • 1 small bunch fresh basil, stems thinly sliced, leaves picked
  • 1 head broccoli, cut into florets, stems thinly sliced
  • 2 large carrots, scrubbed, cut into thin matchsticks
  • 500g packet frozen carrot, cauliflower and broccoli rice
Instructions:
  • Combine the thinly sliced chili with the stir-fry sauce, mixing until fully incorporated. Set aside until needed.
  • In a shallow dish, mix the ginger and 2 tsp of sesame oil. Add the pork and toss to coat evenly. Let it sit for 5 minutes.
  • Preheat a large wok over high heat. Stir-fry the pork in two batches until golden, about 2-3 minutes per batch. Transfer to a plate.
  • Place the wok back on high heat. Toss in the onion along with the remaining oil. Stir-fry for 1-2 minutes. Introduce the basil stems, broccoli stems, and carrot. Stir-fry for 1 minute. Add the broccoli florets and 1 tablespoon of water. Stir-fry for 1-2 minutes until veggies are almost tender. Pour in the stir-fry sauce. Reintroduce the pork to the wok. Stir-fry for 1 minute until heated through. Fold in three-quarters of the basil leaves and mix well.
  • Simply follow the packet directions to heat the vegetable rice. Once heated, divide the rice among serving bowls. Top with the pork stir-fry, then sprinkle with the remaining basil leaves and extra chili, if desired. Enjoy!
